Served on a pristine green plantain leaf, this multi-course vegetarian feast features over two dozen distinct items, each meticulously prepared using fresh, local ingredients like coconut, raw banana, yam, and native spices.
The Royal Geometry of the Leaf
According to ancient dining custom, the leaf is placed with its tapered end pointing to the left. The placement of each dish is geometric and purposeful: the sweet banana chips and pappadam go on the bottom left, while pickles, pachadi, and thoran line the top half. The rice is served in the center, acting as the canvas for a succession of rich, flavorful gravies.
